A crunchy granola recipe that's low in sugar
Granola is probably one of my favourite breakfasts, but finding a tasty and healthy store bought granola is near impossible. Which is why I love this recipe. It has that delicious granola 'crunch' and contains just enough honey to give it that little bit of sweetness without sending your glucose levels soaring.
The addition of nuts and seeds in this recipe increases the protein content and provides a good source of healthy fats helping keep you fuller for longer and maintain your energy levels.
Easy healthy granola
Ingredients
4 Cups oats
1 Cup mixed nuts, chopped into smaller pieces
1/2 Cup pumpkin seeds
1/2 Cup coconut oil
1/4 Cup honey
1 Tsp vanilla extract
1 Cup raisins/dried cranberries
Method:
Heat oven to 200 degrees Celsius
Mix all dry ingredients in a large bowl (except the dried fruit)
Melt the coconut oil in a pan/microwave, remove from heat + add the honey & vanilla essence
Combine the wet & dry ingredients until all the dry ingredients are coated
Place on an oven tray that you’ve lined with baking paper & spread evenly
Bake for 20 minutes, stirring halfway
Remove from the oven & leave to cool, don’t worry if it doesn’t feel very crunchy yet, it continues to ‘crispify’ as it cools!
Add the dried fruit & store in an airtight container
Serve with Greek yoghurt and fresh fruit.
NOTE: You can use any dried fruit you like - chopped dried apricots work really well too.
